Summer Pasta with Cherry Tomatoes, Corn and Mozzarella

Shall we go to Italy?

Thanks to @sognotoscano I got to travel there in my own kitchen. Sogno Toscano’s Organic Spaghetti Alla Chitarra, Sun Dried Tomatoes, Cherry Tomatoes from Campania, Organic Extra Virgin Olive Oil and their Truffle Balsamic Glaze all made for a quick and delicious summer meal perfect for a crowd.

The addition of fresh mozzarella, farm-stand corn, guanciale and handfuls of fresh basil from the garden upped the ante--cause when you have ingredients that say ‘Ciao Italia’ you gotta go all the way. The best thing? The entire dish was done in the time it took to cook the pasta. Brava, indeed.

Serves 6

INGREDIENTS

1 500-gram bag of Sogno Toscano Organic Spaghetti alla Chitarra
1 400-gram can of Sogno Toscano cherry tomatoes including juice
¼ cup diced guanciale or thick cut bacon
1 tablespoon Sogno Toscano balsamic glaze with truffle
¼ cup Sogno Toscano sun dried tomatoes, drained
4 tablespoon Sogno Toscano extra virgin olive oil, divided
1 pint of cherry tomatoes, cut in half
1 cup cooked corn kernels (approximately 2 ears)
1 8-ounce ball of fresh mozzarella, torn into bite size pieces
½ cup of basil leaves, packed
Flakey sea salt, for finishing

METHOD

Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente, reserving ½ cup of pasta water.

In the meantime, make the sauce. In a large pan over medium heat, add guanciale and render for 2-3 minutes until crisp. Remove from pan and set aside. Add 2 tbsp Sogno Toscano extra virgin olive oil to pan, along with Sogno Toscano cherry tomatoes with juice, Sogno Toscano balsamic glaze and Sogno Toscano sundried tomatoes and reduce to simmer for 2-3 minutes.. Add pasta water to pan and let reduce for 1-2 minutes.  Add cooked pasta, sliced cherry tomatoes, corn,  guanciale to pan and toss to combine. 

Transfer to large serving platter and top with mozzarella and basil. Drizzle with remaining olive oil and finish with flakey sea salt. Serve immediately.
