Springtime Afternoon Treat

I have to admit this recipe is one of my most favorite. It’s super versatile and so easy to make— part pantry meal, part weekday easy meal and bonus— it’s vegetarian. What’s more— it's a crowd-pleaser— sometimes my friends love it so much I don't serve anything else. Visually, it’s a stunner— its rosy hue will make your mouth water and the flavor is both complex yet so elemental— hits of fruit, a hint of pepper— it’s a flavor combination that I can guarantee will be on your recipe rotation for years to come. To serve, glass vessels are the best, and while the recipe serves 4— I often polish off the entire thing myself. What’s amazing and so perfect is that it can be stored in a tightly sealed container in the fridge for a while— if it lasts that long.


Serves 4

INGREDIENTS

1 750 ml bottle rosé wine

METHOD

Chill closed bottle in fridge for 1 hour or longer. Open bottle using corkscrew or better yet, it’s a screw top. Pour into glasses. Serve immediately.
