Seared Figs with Parmesan, Walnuts and Honey
This is one of those easy summer dishes that fit in anywhere— as a starter, as a side dish, or as a simple dessert. Cause summer cooking sometimes wants to be not about cooking, but about combining fresh flavors and textures in the quickest way possible, so you can get back to the dinner table, pour a bit more rosé and continue having a great time with friends and family. Isn’t that the best kind of recipe sometimes?
Serves 4
INGREDIENTS
8 oz fresh figs, halved lengthwise
1 tsp olive oil
1 cup good parmesan (such as Parmigiano Reggiano), broken into bite size hunks
½ cup walnuts, toasted and roughly chopped
3 tbsp fresh thyme leaves, plus more for garnish
Zest of 1 lemon
¼ cup honey
1 tsp flaky sea salt
METHOD
In a dry pan over medium-high heat, toast walnuts until fragrant, approximately 2 minutes. Transfer walnuts to a small bowl and return pan to stove. Add olive oil to pan and add figs, cut side down. Sear until lightly browned on cut side, approximately 1-2 minutes.
Transfer warm figs to a serving platter along with parmesan and walnuts. Drizzle with honey and finish with thyme leaves, lemon zest and flaky sea salt and serve.
