Savory Tomato French Toast with Egg
Let’s talk tomato paste. You probably have tomato paste in your pantry— and what you have is an umami powerhouse that’s so incredibly versatile— it’s not just for your spaghetti sauce anymore. The concentrated tomato flavor is packed with flavor and is a quick fix for any meal to give a background note for any meal. When the tomato paste hits in the pan is when the flavor really activates and those sugars start to caramelize. Makes 2 servings
INGREDIENTS
4 slices brioche
1 cup whole milk
6 tbsp tomato paste, divided
½ tsp kosher salt
¼ tsp black pepper
6 large eggs, divided
Unsalted butter, for pan
Flat leaf parsley, for garnish
Flaky sea salt, for finishing
METHOD
Whisk together whole milk, 2 tablespoons tomato paste, 4 eggs, kosher salt and black pepper in a shallow dish. Use remaining tomato paste to spread a thin layer of tomato paste on each side of bread.
Melt 1 tbsp butter in a non-stick pan or cast iron skillet over medium low heat. Dip bread slices into milk mixture, soaking each side for at least 10-15 seconds or so and add to pan. Add more butter as needed. Cook bread for 4-5 minutes per side or until bread is crisp and browned. Transfer to serving plates.
Make sunny side up eggs. Turn heat to medium high and melt 1 tsp butter and crack eggs into pan. Cook until whites are set, then cover to set yolks.
To serve, top two slices of French toast with an egg. Garnish with flat leaf parsley, finish with flaky sea salt and serve immediately.
