Salad Math

A salad is the quickest go-to for fast, easy, delicious and (relatively) healthy meals. They, of course, can be an easy side dish or a main. I almost always prefer to plate salads on a platter— as opposed to a bowl— because that way all the smaller bits don’t end up down at the bottom and everyone can get an evenly distributed helping.

So, what’s the math?

Veg x 2

Sure, lettuces of any kind are great, but think beyond the leaf. Thinly shaved fennel, paper-thin ribbons of carrot or zucchini? Yes, please. Slices of cucumber or radish? Count me in. For variety I use two kinds of vegetables. It keeps things interesting— no boring salads here! Sliced tomatoes and avocado? Perfect. And I should also remind you the veg can be roasted, grilled or pan-seared even. It’ll add another layer of flavor and even temperature. So grill that corn for some great char and then add the kernels into the mix.

+ Crunch 

Think toasted nuts, seeds, breadcrumbs, croutons. And yes, carrots count too!

This category can be optional; but listen, there’s nothing like a few crumbles of feta, a schmear of labneh or even the velvety smooth taste from your buttermilk dressing. You know that word ‘unctuous?’ That’s what should come to mind with your creamy component. A little dab’ll do ya also— so go with a light hand. Remember your veg is the star!

+Sweet 

A touch of sweetness will add balance to your salad and also be a nice little surprise.  Throw a handful of strawberries or sliced plums into your salad. No fresh fruit? How about something from the pantry like a handful of dried cranberries or golden raisins. I’ve even been known to add a drizzle of honey to finish a salad. Your mouth will thank you.

/Acid 

9 times out of 10 this will be your salad dressing. Whether you’re using lemon juice, rice wine vinegar, Dijon mustard or balsamic— you’ll want that tang in your vinaigrette balanced out with the smooth mouthfeel of your olive oil.

Remember, salads should be EASY and pretty quick to make. So get creative! Think about what seasonal ingredients are delicious, ‘cause in most cases if they grow together they go together.
