Ramen with Prosciutto and XO Sauce

Let’s talk prosciutto. Prosciutto is, of course, the Italian dry-cured ham that’s usually sliced thin— it’s buttery and sweet and salty and filled with umami— it’s all about that signature rich, round and savory flavor. With this recipe, we’ll have the prosciutto as is and also crisped up in the oven with a little bit of brown sugar. XO Sauce is a spicy sauce made from dried scallops and shrimp from Hong Kong that also has amazing umami— so we’re boosting up our flavors even more. This dish comes together in a flash cause we’re using ramen— we all have a few packs in the pantry don’t we?— it’s the perfect quick lunch or snack— so let’s get our flavor chase on with prosciutto!

Peter Smo Flavor Chase Prosciutto

Makes 2 servings

INGREDIENTS

2 packages instant ramen
16 thin slices of prosciutto, divided
1 tsp brown sugar
2 tbsp XO Sauce
2 tbsp butter
Cilantro, for garnish

METHOD

Preheat oven to 350F.

Arrange 8 slices of prosciutto on a lined sheet pan, sprinkle with brown sugar and bake for about 12 minutes or until crisp. Let cool and break into bite sized pieces.

Slice remaining prosciutto into bite sized pieces and set aside.

Cook ramen according to package instructions. Use 1 seasoning packet only. Drain, reserving ¼ cup of water. Return noodles to pot along with cooking water. Mix in XO Sauce and butter. Fold in unbaked prosciutto. Transfer to serving bowls and top with crisp prosciutto, garnish with cilantro and serve immediately.
