Oyster Sauce Mayo Chicken Salad
Today we are flavor chasing Oyster sauce! Yes, this traditional Chinese pantry-staple has huge flavor. Oyster sauce is just what it sounds like, it’s boiled oysters mixed with salt, sugar, corn starch and a few other ingredients— its deep and dark and it actually doesn’t taste seafood-y at all— it has an earthy, caramelized and savory flavor that’s quite concentrated and is used in a myriad of Chinese dishes.
This recipe is so simple— it’s two ingredients. I’ll be making oyster sauce mayonnaise— the creamy fattiness of the mayo is the perfect vehicle to carry that oyster sauce flavor and the result is savory and so delicious. I’ll be using it to make a delicious chicken salad— just like what you’d get at any deli, but with oyster sauce mayo this classic lunchtime recipe will zing with flavor. So, let’s do this shall we? Serves 2
INGREDIENTS
3 cups cooked diced chicken breast (approximately 2 large breasts)
½ cup diced celery (approximately 2 ribs)
⅓ cup mayonnaise
1½ tbsp oyster sauce
2 tbsp chopped flat leaf parsley, plus more for garnish
1 tsp lemon zest
Black pepper
METHOD
In a large bowl, whisk mayonnaise and oyster sauce until combined, add chicken breast, celery, parsley, lemon zest and black pepper and mix until thoroughly combined.
Transfer to a serving dish, garnish with parsley and serve.
