Mediterranean Tomato-Braised Cod

INGREDIENTS
One 28-ounce can of crushed tomatoes
1 pint cherry tomatoes (cut in half if large)
3 garlic cloves, thinly sliced
½ cup pitted green olives
2 tablespoons capers, drained and rinsed
2 pounds of MSC-Certified frozen wild Pacific cod fillets, thawed
2 tablespoons olive oil
4 tablespoons butter, cubed
Flat leaf parsley, for garnish
Kosher salt and black pepper
METHOD
Preheat oven to 425F.
Pour crushed tomatoes into 9x13” baking dish. Stir in cherry tomatoes, garlic cloves, olives, and capers. Season with ½ teaspoon salt and ¼ teaspoon black pepper.
Cut cod into 8 even pieces, rub with olive oil, then season with salt and pepper and nestle each piece in the baking dish. Dot fish with butter.
Bake for 15 to 20 minutes—uncovered, or until fish is tender and flakes with a fork. Finish with a glug of olive oil, garnish with parsley and serve.
