Lemony Wheat Berries with Peaches, Cucumber and Feta
This is one of those easy end of summer recipes that are all about the juiciness of peak season peaches, the crunch of cucumbers, the creamy tang of feta and the bright verdant punch of herbs. Best of all, it comes together in no time at all. I’ve used wheat berries, an ancient grain which are whole wheat kernels that are rich in protein and fiber and have a nutty and sweet, delicious chew to them. Farro would also work very well as barley or bulgur.
Serves 4
INGREDIENTS
3 peaches
3 mini cucumbers
1 cup wheat berries
1 lemon, zested and juiced
½ cup parsley, chopped
½ cup basil, chopped
¼ cup mint, chopped
7 oz feta, crumbled
¼ cup olive oil
Kosher salt and black pepper
METHOD
Cook wheat berries according to package instructions and transfer to a large bowl.
Core and cut peaches into wedges. Cut cucumbers into ¼” slices. Add to bowl along with lemon juice and zest, parsley, mint, feta and olive oil. Season with salt and pepper. Toss to combine and serve.
