Fish Sauce Caesar Dressing

Let’s talk fish sauce. It’s made of fish that have been coated in salt and fermented for up to two years and it’s commonly used in East and Southeast Asian cuisine. Its strong stuff with bold assertive flavor and its absolutely delicious. This Caesar dressing using fish sauce is quick and delicious— Caesar salad is one of my favorite salads and let’s face it— it’s all about the dressing. So salty, tangy, cheesy and creamy— and fish sauce is our secret weapon. Let’s get our flavor chase on with fish sauce.

Peter Som Flavor Chase Fish Sauce

Makes approximately 1½ cups

INGREDIENTS

2 tsp fish sauce
1 tsp Worcestershire sauce
¼ cup grated pecorino
1 tbsp lemon juice
1 tsp Dijon Mustard
¼ cup mayonnaise
½ cup olive oil
1 tsp kosher salt
½ tsp black pepper

METHOD

In a jar, add fish sauce, Worcestershire sauce, pecorino, lemon juice, Dijon, mayonnaise, olive oil, salt and pepper. Use a hand immersion blender to blend, or shake vigorously, until smooth. Store in the refrigerator for up to 1 week in a tightly sealed jar.
