Everything Dutch Baby with Smoked Salmon and Herby Sour Cream

Who doesn’t love a Dutch Baby? A simple batter that puffs and balloons up in the oven to dramatic heights resulting in crispy edges and a tender center. I’m a fan. I’m also a fan of making one big thing and cutting it up— less fiddling more time for eating. While jam and fruit are the norm, I’ve made a savory take using a slice of quintessential New York— the iconic Everything Bagel. I’ve kept the accompaniments in line too— herby sour cream and smoked salmon. Feel free to add your own favorites into the mix— red onion, capers, sliced tomato? All good. This is the perfect brunch or lunch with a green salad.


Serves 4

INGREDIENTS

3 large eggs, room temperature
½ cup AP flour
½ cup whole milk, room temperature
½ tsp kosher salt
4 tbsp unsalted butter
2 tbsp everything bagel spice mix (see below), divided
1 cup sour cream
¼ cup chives, finely chopped, plus more for garnish
¼ cup dill, finely chopped, plus more for garnish
Smoked salmon, for serving

METHOD

Preheat oven to 425F and place a 10” cast iron pan or baking dish into the oven on the middle rack.

In a medium bowl, use an electric mixer or whisk to combine eggs, flour, milk and salt until completely smooth. Let rest for 15-20 minutes.

When batter has rested, carefully remove pan from oven and add butter and 1 tbsp everything bagel spice and CAREFULLY swirl pan so butter and spice covers bottom and sides of pan. Add batter and return to oven. Bake for 15-17 minutes until puffed and golden.

In the meantime, make the herby sour cream. In a small bowl mix sour cream, chives and dill until combined.

Remove Dutch Baby from oven and sprinkle remaining everything spice on top and garnish with dill and chives. Serve immediately directly from pan, cutting into wedges and with herby sour cream and smoked salmon alongside.

Note: You can make your own everything bagel spice too— in a dry pan over medium-low heat, combine sesame seeds, poppy seeds, and caraway seeds until toasted. Remove from heat and add minced dried onion and minced dried garlic and a pinch of salt and pepper.
