Easy Zucchini with Sesame Dressing

The tender crunch of thinly sliced zucchini are the perfect canvas for this creamy just-a-bit-spicy side dish that comes together in about 5 minutes.


Serves 4

INGREDIENTS

¼ cup tahini
2 tbsp soy sauce
1 tbsp rice wine vinegar
2 tsp sesame oil
1 teaspoon honey
1 tablespoon chili crisp, plus more for serving
2 medium zucchini
Toasted sesame seeds, for garnish
Kosher salt and freshly ground black pepper

METHOD

In a bowl, whisk together tahini, soy sauce, rice wine vinegar, sesame oil, honey and chili crisp. Whisk in up to 1 tablespoon of water to loosen up the dressing. Season with salt and pepper.

Use a mandolin to cut zucchini into very thin slices (see note) and add to the bowl. Toss to coat in the dressing (resist the urge to add more water if your dressing feels thick—the zucchini will release water as it sits) then transfer to a serving platter. Finish with chili crisp, garnish with sesame seeds, then serve.

Mix it up: Make it with noodles! Toss the sauce with cooked Chinese noodles, soba or ramen.

Note: You can also use a vegetable peeler to shave zucchini into long strands
