Creamy Dreamy Broccoli Soup

This soup is so full of flavor and so luxuriously creamy you’d never know it was vegan—and you’d never know that it took—literally—minutes to make in a Vitamix Ascent X. Verdant, bright but with a depth of flavor from miso and nutritional yeast (which gives things broccoli cheddar soup vibes)—it’s the perfect soup for anytime because everything goes in and it’s done—hot and ready to serve—in about 6 minutes. (Don’t worry, you can also make this in a traditional blender).


Serves 2

INGREDIENTS

½ cup coconut cream
1 teaspoon lemon juice
2 tablespoons nutritional yeast
1 tablespoons yellow miso
¼ cup raw cashews
1 scallion, cut into thirds
2 to 3 sprigs of dill, plus more for garnish
¼ cup basil leaves
2 cups steamed broccoli
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Vegan yogurt, for serving
Extra virgin olive oil, for finishing

METHOD

Add 2 cups water, coconut cream, lemon juice, nutritional yeast, miso, cashews, scallion, dill, basil, broccoli, salt and pepper to a Vitamix Ascent X and press the ‘soup’ button. Alternatively, blend in a blender until pureed and smooth, then pour into a saucepan and heat on medium low until soup is warm.

Pour hot soup into bowls, finish with yogurt and olive oil. Garnish with dill fronds and serve.
