Chocolate Chunk Miso Brown Butter Blondies

I’ve partnered with Russell Stover to create my Chocolate Chunk Brown Butter Miso Blondies featuring luscious chunks of Joy Bites that are the perfect (and easy to make!) bite for anytime— but especially for me-time. I’ve used a bit of each variety of Joy Bites bars for a fun mix, and the nuttiness of the brown butter and the subtle umami of the miso create a depth and complexity that’s completely delicious.

Makes 16 squares
INGREDIENTS
1 cup unsalted butter
1¾ cup light brown sugar
2 large eggs
1 large egg yolk
1 tsp vanilla extract
½ cup white miso
1½ cup flour
1 tsp baking powder
1 tsp kosher salt
1½ cups roughly chopped Joy Bites chocolate bars, divided
Flaky sea salt, for finishing
METHOD
Preheat oven to 350F.
Line a 9” square baking tin with parchment with overhang.
To brown butter, add butter to a saucepan over medium heat and melt, swirling occasionally, until butter turns deep golden brown— approximately 5-7 minutes. Cool on countertop or transfer to a sealed container and chill in the fridge.
In a medium bowl, combine flour, baking powder and salt and whisk to combine. Set aside.
Once brown butter is cooled (and still in liquid state), add to a large bowl along with brown sugar, eggs, egg yolk, vanilla extract, miso and using a whisk or handheld electric blender, combine until smooth. Fold in flour mixture until just combined (it’s ok if a few streaks of flour are visible). Fold in 1 cup chopped Joy Bites bars. Pour batter into prepared pan and smooth top.
Bake for 30 minutes or until top is golden brown and has a few cracks. The center might not be set yet but the blondies will set up as they cool. Remove from oven and sprinkle remaining ½ cup Joy Bites chunks on top in an even layer. Cool completely on a wire rack. Finish with flaky sea salt. Cut into squares and serve.
