Meet Colu Henry. Writer, recipe developer and cookbook author. You may have spotted her highly popular recipes gracing the pages of The New York Times, or perhaps you’ve seen them in similarly distinguished platforms like Food and Wine and Food52. Or perhaps, like me, you’re obsessed with her first cookbook ‘Back Pocket Pasta.’ If you’ve said ‘YES’ to any of the above, you’ve undoubtedly fallen head over heels for her approachable yet elegant style of cooking and her humorously insightful and oftentimes heartfelt writing. Well now, you’ll have even more reason to celebrate with the the launch of her second cookbook ‘Colu Cooks: Easy Fancy Food’ which is just that. What’s on your mind?

Too many things! In the middle of planning events for my forthcoming book Column Cooks which comes out 4/26!

Where are you right now?

My office with a SAD lamp. I really do think they work.

Today? 6:30 am. Can you tell I'm punchy?

Why do you do what you do?

I love storytelling through food. Even if you don't follow the recipe to a tee, but it's inspired you to cook something— I've done my job.

What is your favorite meal to eat?


A big bowl of pasta with too much grated Pecorino.

What is your favorite meal to cook?

Roast chicken. It's comforting, makes the house smell great and will feed you in multiple ways, for multiple days.
